There’s no better pairing than cheese and wine. But did you know that there’s science behind this perfect match? The tannins found in the wine are chemical compounds that gives the wine its texture, when in contact with our saliva they coagulate the mucin (a protein that lubricates the mouth) producing a sensation of “dryness”.

However, the fat found in the cheese reliefs this sensation, because they bound to the tannins preventing its reaction with mucin. And that’s wine this is such a perfect pairing.

Bicicleta Pinot Noir – brie

This is a light bodied wine that presents aromas of plum, strawberry, raspberry and other red fruits. It is light on the palate and delivers a soft oaky hint. The fresh fruit combined with low tannins makes this a very balanced wine.

As for the pairing, go with cheeses that are soft on the palate. Not very bold flavored, like the Brie, king of French cheeses. Its creamy texture and salty-buttery flavors are just what this fresh wine asks for.

Organic Pinot Noir – gruyere

This Pinot Noir is made with organic grapes and delivers an intense ruby red color and aromas of raspberry and cherry. On the palate it is juicy and persistent, asking for a more matured cheese.

The gruyere is the perfect choice. When young, it is almost sweet, and as it ages, it becomes more salty and sometimes more spicy. At any “age”, it goes great with Cono Sur’s Organic Pinot Noir.

 

Reserva Especial Pinot Noir – emmental

This wine presents notes of coffee and cocoa, soft tannins and a persistent finish, which goes great with cheeses that are a bit more firm, that have more body, like the emmental that also brings some soft nutty flavor and slightly creamy aroma.

 

Single Vineyard Pinot Noir – camembert

This is a light bodied Pinot Noir and at the same time it is intense in flavor and color. A wine that makes San Antonio valley proud.

For this wine, choose the camembert, its spongy and velvety texture is just perfect for this vibrant wine.

20 Barrels Pinot Noir – feta

A wine that presents an intense ruby red color, displays notes of raspberries mixed with oak. It is persistent and smooth. This is a more “serious” wine that asks for a cheese that is a bit more intense, like the feta that presents a slightly spicy and salty flavor. This cheese can be creamy or a bit more firm depending of its origin. Either way, it goes great with 20 Barrels Pinot Noir.

 

Ocio Pinot Noir – manchego

This is a bold Pinot Noir with notes of plum and black cherries that ask for a strong cheese like the manchego. Its buttery texture combined with its slightly acidic and spicy flavor make it the perfect pair.
